Kombucha: Red Wine Vinegar

I do a lot of experiments with kombucha so I love to read about other's experiments as well. 
This person threw a SCOBY in old, bad red wine to make red wine vinegar. 

What's the craziest thing you've done with a SCOBY? (PG13 only please!)
